Beef-Bouillon Summer Squash

This is a simple recipe. No frills. But it tastes great and makes an unique side dish to complement any meal.

Ingredients

3 or 4 Medium Summer Squash

2 Tablespoons Beef-Bouillon (We use the powdered Knorr brand)

1/2 Tablespoon Crushed Rosemary (Fresh or dried works)

1 Teaspoon Black Pepper

1 Teaspoon Onion Powder

1/2 Teaspoon Red Pepper Flakes (Optional)

1/4 Cup Olive Oil or Melted Butter

Directions

Cut summer squash in to 3/4 inch thick slices with peel on. You want a nice thick slice otherwise it will just get mushy in the broiler. No one likes mushy squash.

Combine all the other ingredients together and cover the top of each slice of squash with mixture. Place on greased cookie sheet and place in broiler on highest heat (500 degrees or more). Keep a close eye on it and remove when tops are browned but the squash is still firm.
